Chips, Codfish, Garlic
Place in a blender the garlic, olive oil, lemon juice, 3 tablespoons of the cooking water from the potatoes, salt and pepper and combine. When the potatoes are cooked, peel them, put them in a bowl and mash them with a fork. Add the mix from the blender and mix well. Finally, add the spring onions and the flat-leaf parsley through the skordalia.
It is important that the cod you are going to fry is dry. The most convenient is to use fresh cod. Heat the sunflower oil in a deep pan. Then dip the cod pieces through the batter and hop into the pan! When they have turned a nice golden brown color at the bottom, turn them over. When they have also turned the right color on the side, take them out of the oil and let them drain on kitchen paper.
